The Russian Federation is a country member of the WTO and for export-import operations it must annually monitor residues of prohibited and harmful substances in food and feed at the federal and regional levels. State laboratory veterinary monitoring is one of the effective mechanisms for monitoring the safety of animal origin products . Monitoring is an objective and arbitrary sampling, processing and analysis of samples to collect information about the presence of microorganisms and the levels of residual concentrations of chemicals in previously defined, common sets of samples. Monitoring is planned and carried out on the basis of risk assessment.
